The Verdejo grape is its emblem, yet the diversity and fertility of its gravelly soils (rich in calcium and magnesium) allow for the fullest expression of this variety. It is true that the renown of its whites —a common drink at the court of the Catholic Monarchs— is vast; however, do not let their freshness and flavour prevent you from discovering the other treasures of this designation, such as the fortified wines (both pale and golden), where biological and oxidative ageing work their magic.
