About Tagaro Passo del Sud Appassimento

Imagine a child running through the vineyards of the Valle de Itria, in the heart of deep Apulia (Italy), pausing to inhale the dense aroma of the must and gazing wide-eyed at the mysterious work of adults among the barrels. That child was Michele Lorusso. Growing up beside his father and breathing in the family's tradition, Michele learned a lesson that was indelibly etched in his mind: that wine is, above all, culture, an unwavering respect for the land, and a daily dedication that knows no shortcuts. Over the years, this genuine love became the driving force to establish Masseria Tagaro and shape a new and vibrant vision of the wines from his region. A vision so coherent that it has managed to captivate Luca Maroni, one of Italy's most influential and feared critics, who has been won over by the purity and intense fruit concentration of this house in his renowned guide Annuario dei Migliori Vini Italiani.

To understand why this red wine is pure hedonism, one must mentally travel to the town of Locorotondo. Under the auspices of the IGP Puglia, the 10 to 20-year-old vines of the winery sink their roots into very particular soils—a perfect blend of sand, clay, and limestone. It is a terroir that withstands the scorching sun of southern Italy, but thanks to this composition, it retains the necessary freshness to prevent the vines from becoming overburdened. However, the true ace up Masseria Tagaro's sleeve is the appassimento method: allowing the grapes to overripen and slightly wither on the vine before harvest to concentrate the sugars and aromas to stratospheric levels.

Tagaro Passo del Sud Appassimento is the result of taming that fruit beast with surgical precision in the winery. Following an ultra-gentle destemming, the skins and must are left to cold macerate for 4 days at a very low 4-5°C to extract all the colour and aromatic load without imparting a hint of bitterness. Then begins the fermentation process, with the temperature cranked up in the initial days to set the structure and then lowered to nurture the fruit. After malolactic fermentation in stainless steel tanks, the wine is left to rest for a few months in oak barrels. No excessive wood; just the right amount of time to refine the texture of a spectacular blend where primitivo, negroamaro, nero di Troia, and merlot meld in perfect harmony.
