This, coupled with the steep incline (which facilitates soil drainage), lays the perfect foundation for cultivating quality grapes. In the case of Domaine de l'Enclos Chablis Grand Cru Les Clos, we're talking about family-planted vines dating back to 1964, which are currently tended by Romain, Damien, and their team. In this new chapter, starting in 2016 when the brothers took over the family business, organic farming and biodynamic principles will steer their vineyard practices. Only through this approach can one truly taste and understand the chalky and clay soils.
