About Forlong Burbuja Blanco
Time has a curious way of placing everything in its rightful place. The most cherished dreams are those that take time to come to fruition, and thus it is unsurprising that when Alejandro Narváez and Rocío Áspera were able to establish their own winery, they played with words to clearly express their intentions. This pair of viticulturists embarked on their journey in 2007 by restoring an old estate known locally as El Olivar de Forlón, a special corner that served as a tribute to its 18th-century owner, the British merchant Peter Furlong. In founding the project, they decided to add a 'ge' to the surname to create a phonetic play on the English phrase "for a long time", symbolising their project was born without haste, with the intention of enduring into the future and respecting the unhurried rhythms demanded by the land.
From El Puerto de Santa María, under the auspices of the geographical indication of Vinos de la Tierra de Cádiz, emerges this sparkling wine with a genuinely Atlantic character. The vines are planted in albariza soils, that dazzling, chalky earth that retains rainwater like a sponge to nourish the roots during the scorching Cádiz summer. The climate is Mediterranean but is profoundly influenced by the proximity of the ocean, receiving the westerly winds that infuse the vineyard with moisture and freshness during the nights. For this white wine, palomino grapes are selected, the reigning variety of the area, cultivated under the principles of organic farming. The winery's cultivation philosophy is based on absolute respect for biodiversity, employing manual harvesting to collect the grape clusters in small boxes, ensuring they arrive whole and fresh at the winery.
The production of this sparkling wine follows an artisanal sequence under the ancestral method, a historical technique that, unlike the traditional method of sparkling wines, involves bottling the must before the completion of its first and only alcoholic fermentation. After the manual harvest, the grapes are gently pressed and the must begins to ferment spontaneously with its indigenous yeasts, the natural microorganisms of the vineyard itself. Midway through the process, the liquid is bottled so that the end of fermentation occurs within the bottle, capturing the natural carbon dioxide cleanly and without adding external sugars. After a three-month period of horizontal rest in the winery, known as 'sur lie', the bottles are placed upside down on racks for three weeks so the lees, the yeast residues, settle in the neck. Finally, the disgorgement is performed "à la volée", opening the bottle by hand so that the pressure of the gas expels the sediments with minimal liquid loss before the final corking.
